SUNDAY

Pulled Chicken

SERVES: 16 

TIME: 3 hours 5 min (3 hrs slow cook time)

TIP:

If you have time, let chicken rest for 15 minutes before shredding to fully absorb the flavors. 

Tuck into toasted buns and top with ½ cup coleslaw each to make easy pulled chicken sandwiches.

Swap pork shoulder or roast to make pulled pork.

Mac & Cheese

TIP:

Stir leftovers from yesterday’s Pulled Pork into your mac & cheese to add protein and give the meal a satisfying, smoky flavour. Stir in some Dijon mustard for a subtle kick and sprinkle of sliced green onion over top to finish the dish. 

Serve with a side salad.

Chicken Souvlaki

Prep ahead on Monday night! Slice pepper and onion, and toss all the ingredients in a large bowl. Cover and marinate in the fridge overnight. Come dinnertime on Tuesday, just transfer to sheet pan and roast in the oven!

Sweet Garlic Chicken

TIP:

Pat chicken thighs dry with a paper towel or clean cloth before tossing with the other ingredients to remove excess moisture. This helps the meat brown more nicely and cook more evenly. 

Chop chicken thighs and potatoes into smaller pieces for faster cooking.

Chicken Steaks with Creamy Mushrooms Sauce

TIP:

Replace water in the recipe with your favourite Epicure Broth for added flavour. 

For a vegetarian option, swap firm, cubed tofu for chicken.
